“Real Chefs” do it all the time. They just grab a steel and in seconds they’ve got they’re edge back. As to sharpening, most professional kitchens don’t own their knife, they are rented. Once a week they’re swapped out for freshly sharpened knifes. So no big deal.
If you buy the DVD, the Ratatouille recipe used in the movie is on the Disc.
It’s even better in real life than it looks in the movie.

I just noticed for the first time that the chef scrapes the food using the blade side of the knife… something no real big time chef would do because it dulls the knife a considerable amount and you do not want to have to spend more time than necessary sharpening your knives and eventually having to replace your knives from all of the sharpening.
Great CG effects though… looks good enough to eat!!!
